 Post subject: Phil DOES have Skill at the Grill. . .

As I said in an earlier post, I'm getting married on 3.05.05 --- I could not afford to screw this Valentine's Day up. . .

I have only hung out with Phil in person on a couple of occassions, but, I consider him a true friend --- enough of a friend to trust him with the recipe he provided in an earlier post for steak recipes (Beef Filets with Asparagus and a Roasted Shallot and Tarragon Sauce).

Growing up as a Cajun, I learned to be a very good "cook", but, I am no "chef". That changed tonight thanks to Phil's help. The dinner was fantastic - thank you Phil. . .

If he posts more recipes here, I suggest you guys take him up on them -- my fiancee' and I listened to a bunch of old french music, drank a bottle of wine (okay, two bottles) and were trully blown away by how fantastic dinner came out. . .the shallot based sauce was such an amazing compliment to the asparagus and steak.

I do have to confess, I couldn't find the Tamari, so, I traded it out for a Porcini Mushroom infused soy sauce and a mushroom based olive oil (for consistency). It was splendid. . .

Divine stuff m'friend. . .divine indeed.

not a chef, my ass. That was a bad ass substitution for the tamari, big guy.

I'm glad it turned out well. I made the same dish for gina and her family tonight. Everyone dug it. We drank some cab, and some riesling. I made that roasted red pepper and smoked gouda soup, dessert was grilled peaches soaked in whiskey and honey, and gina made french vanilla ice cream to serve it with. We ate dessert as we watched 24.

Not a shabby night.
