Kentuckians huh? haven't heard of em, i'll have to see if anyone around here carries them.

I like my roasts lighter than full city+ typically but it really depends on the bean.

I'm bidding on a roaster. If i don't get it, I'm building a roaster.

I'm all about dark roast. Less acidity and more robustness.

Man, i wish i'd kept track of the beans I've been drinking over the past few months.

Standouts:

Counter Culture Valle de Santuario (peru, milk chocolate and plums)

Madcap Kiryama (burundi, nutty and bright citrus)

Coava Bella Aurora (nicaraguan, strawberries, cardamom)

I use a large burr grinder and a Chemex.

As far as beans, I've been alternating between Tonx and La Colombe because I'm a pretentious turd.

Tonx is kind of expensive, but you get fresh roasted, fair trade beans in the mail every 2 weeks, usually from a different place depending on what's in season. I'm still in my first month of it, but one concern I have is that the stuff I've gotten has that weird nutty flavor that I usually hate (think: Intelligentsia). Still, it ships out of LA, so Billy you might wanna check it out. I usually get beans 2 or 3 days after they were roasted out in Claremont, so you might even get it next day...

La Colombe is now and always my favorite coffee.

Kait and I had a Tonx subscription for 3 months that her parents got her for christmas. I thought it was pretty delightful.

I'll try and get some La Colombe.

My faves have been Counter Culture, Handsome, Cuvee, and Madcap. I'll have to get some more Coava before i can judge, but it's also pricey.

Have you tried brewing with an aeropress? Are you using a Kone or paper filters with the Chemex? I'm hand grinding, but I'm considering getting a Baratza of some kind.

I'm addicted to Velluto Nero from the wonderful Algerian coffee store, the most perfect espresso blend I've tasted. Kicks like a mule.

I haven't, but I know people who swear by them. I'd probably have already bought one if I was unhappy with the Chemex in any way.
Paper filters. That might be the biggest drawback, that I have to keep remembering to buy those shits.

Our burr grinder isn't the best, and I have a little hand grinder I got for a trip once that I still use when I have time to really make myself the best coffee possible. It's not very big though so it takes awhile, especially considering how strong I like my coffee.

Just ordered some of this:

When I was in Rome, Sant'Eustachio was the best café that I could find. Love it. And the misses, being a major coffee freak, herself, will be very happy, methinks.
Pretty excited for it.

Get one. They're cheap. Also, if you don't want the paper filter, try the Able Kone. Although paper is cheaper. ibought a clever dripper today. I love it.
