Ok so all Phil's talk about food made me jealous- so Im going to show off my own skills... Prosciutto wrapped salmon with a mixed bean ragout....really easy to make, if not cheap.

can't see it at school, but it sounds good.

Put the recipe on up.

Here's a salmon recipe i got from my friend dana (not norwood, but she does live in portland...)


Chilled Poached Salmon with Cucumber Dill Sauce

Ingredients for Poached Salmon:

1 quart water
3 oz. white wine vinegar
2 Tbs. salt
Two 6 oz. salmon filets, skin on

Preparation for Poached Salmon:

In a large skillet, heat 1 quart water, 3 ounces white wine vinegar, and 2 tablespoons salt. Place two 6 ounce salmon filets in liquid and poach until done, about 10 to 12 minutes. Remove and cool.

Ingredients for Cool Cucumber Dill Sauce:

1 cup sour cream
1 cup mayonnaise
1 lrg. cucumber, peeled, sliced lengthwise, seeded and chopped
1 Tbs. dill weed or to taste
Kosher salt to taste
White pepper to taste

Preparation for Cool Cucumber Dill Sauce:

In a bowl, combine 1 cup sour cream and 1 cup mayonnaise. Mix to blend. Add 1 large peeled chopped cucumber and 1 tablespoon dill weed. Mix thoroughly. Season with kosher salt and white pepper to taste.

not that this requires an iota of skill, but i'm spending my weekend grilling sausages from the Italian Market downtown. Which means I win.

recipe:
buy sausages, throw them on grill with plate of green peppers/onions.
turn.
drink 17 beers.
serve.
drink 18 beers.

Dont have it with me.. but essentially the salmon is wrapped in prosciutto and then baked.. the mixed bean ragout consists of edamame, white beans, and Haricots verts- there is also celery, carrott and I forget what else. You blanch the haricots verts, then cook the edamame over mid-hi heat for about 7-10 min (if frozen and shelled), add the white beans.. and I forget the rest for now...

EDIT: Hey, Phil or whoever knows the answer: How long can defrosted chicken stay in my refrigerator? I think I thawed it on Saturday and it has been sitting in tupperware in my fridge since then. Do you think it's gone bad?

I'd think you're getting toward the edge, but give it a sniff test. Also, if it's writing letters to Amnesty International when you crack that tupperware lid, I'd toss it.

yeah red I'd cook that ASAP. It's better to have cooked chicken in your fridge for a day than raw.

If your fridge is 35 degrees or below, and that tupperware is sealed tight, you ought to be all right.
