While I appreciate the inventiveness, and the downright punk attitude here, I'd rather sink my teeth into a shrimp cocktail than inhale it. Maybe I'd change my mind after inhaling that atomizer, but I don't know. I guess I'm more dothead than I thought, read cheap.

A bigger issue for me is that a great deal of the enjoyment and sensuality of food is the "mouth feel" of a given dish -- the textures (and combination thereof), the chew, and the way it plays about the tounge. With the infusion, that aspect is completely lost.

correct. but you also have yet to experience the sensations that his food can deliver.

in other words, i don't think you get it.

form vs function- I can understand the exploding black truffle or whathaveyou.. I mean, your expectations leading you one way and then the sensations, the food brings you another. It breaks down preconceived notions of what to expect- I can respect that. However, at some point Id imagine you need to ask the functional question which is simply- how does it taste? I cant comment until then...but Im skeptical.

I would love to try that place. I am always intrigued by the science of cooking, so it would be neat to see someone stretch the boundaries of what can be done with food.
