Nachos with eggs?

I just (accidentaly/drunkedly) post-draft unloaded a small bottle of salsa verde on my eggs w/cheese, and this is pretty darn yumyy.

That would be 'migas' or as some Mexicans refer to them as 'chilaquiles'. One of my fave breakfast meals.

My nachos is the boss.

Plain corn chips, leftover taco mince, salsa, mozarella and eschallots. The key is in the layering. 1:30 in the microwave, then 5 minutes in the oven. Chuck some homemade guacamole on the top and your hangover is gone.

I've never bought nachos that tastes any good, but then again, we don't have Mexicans down here.
