I think they are 'ironic' because that implies that the song isn't a classic that most bands would do at some point. Its a "remember this song? what if we punked it up?" ala Smooth Criminal.

I haven't heard this, but would probably veer into oncoming traffic if I did.

well, yeah, I get that one, but Boys of Summer for example was just a straight cover for a band needing some cash

But still, it fits the general mode...Mall punk band covers Don Henley.
Bizkit covers Faith (I think this may be the fist squirrgle)
Vanilla Ice covers himself (therefore saving us from Sum 41 doing it.
