yeah, that was the first time. this recent time around was for a couple friends that came over. the female of the two preferred chicken, so I swapped the sauce's red wine w/ white and she loved it.

do have that Grilled Stuffed Chicken Breast recipe of mine? That's a hit too.

Marinate chicken breasts over night in a zip loc with lemon juice and olive oil, in a different zip loc marinate sundried tomatoes in red wine. Slit a pocket in the side of each breast, layer sundried tomatoes, fresh basil leaves, and then herbed goat cheese in the pocket. Seal with oiled tooth picks. Grill 7 minutes a side over a direct flame.

Or you can swap wilted spinach and feta for the basil and goat cheese.

Try that on Ms. I don't eat cow even though I'm not a Hindu.

halve some peaches and soak them overnight in Jameson, honey, cinnamon, nutmeg, and a bit of ground clove.

You'll grill them, but before you do, take that sauce and reduce it over heat.

Grill for a few minutes over indirect but hot flame. Serve over vanilla ice cream and pour that reduced sauce LIBERALLY over the whole mess.

You had to describe the meal you were going to cook for us didn't you :( It had taken me a week to forget about it and now I'm salivating again.

On the bright side I made a big pot of chili and some homemade serrano pepper cornbread last night. Should last me a few days.

Sorry buddy. That chili and cornbread sounds tight. Have you gotten any use out of that skillet i got you?

A note re: the original recipe for "Yummy Chicken"...
The asparagus can be added halfway through the baking time, if you prefer it al dente.

Yep...cooked eggs and bacon for breakfast burritos three days and cooked a couple of pounds of chop sirloin, onions and garlic for the chili the other day. thx again for that.
