Totally addicted to jambalaya these days. Have made a pot of it both of the last two weekends and then eating the leftovers damn near every day for lunch.

I don't know enough to get all into a detailed discussion on different kinds. Just saute green pepper, onion, celery, garlic in some oil...add some tomatoes, rice and stock, couple bay leaves and some hot sauce...add fresh shrimp and chicken soaked in some spices, toss in some Andouille sausage. No idea what type this is called, but I like it just fine.

I meant what kind of meat. Simple Chicken and Andouille is my favorite. But I don't like tomatoes in mine. Red (tomatoes) jambalaya is something you find in New Orleans but won't see as often in Cajun Country.

Yeah, wasn't sure if you meant what kinda meat or if there was gonna be the tomato debate. I'm an outsider so I refuse to claim much knowledge, except that it tastes good like this to me and this is how I know to make it, but I am sure I would enjoy the hell out of some another way. I do like having the Shrimp in there myself. I may give it a shot without tomatoes sometime just to see the difference, just always made it like this.

I think that's the great thing about the dish, it should be anything you want it to be. It's not that I don't like shrimp, I just find that it often gets overcooked and hard rubbery shrimp is not something I particularly enjoy. If done right, I welcome it. And if I cook it myself, I find dealing with shrimp more work than chicken and I'm lazy.

Now, I'm hungry from some.

You just gotta make sure you don't overcook the Shrimp, which I don't find too difficult, just make sure it goes in last.

I still gotta learn to make Étouffée, preferably with crawfish. Restaurant I go to now and then makes that and I really like it. Haven't tied making it myself yet.

Is that the Louisiana themed place not to far from Busch stadium? I've been there.

Probably. Place has an interesting history. It was originally a whore house for all the river travel...or at least so the local lore goes.

There are other higher end creole/cajun places over in Soulard not far away from there, but Broadway Oyster Bar is a good place to eat some spicy food and drink beer outside in the good weather.
