Grilled cheeses for lunch today:

Potato bread, fried in enough butter to stop the heart of lowland Scot, two slabs of Muenster--under perfect heat to lightly crisp the bread and totally melt the cheese.

No better food on earth.

I found this recipe for grilled cheese in Boston magazine.

4 slices sourdough bread
6 slices Gruyere cheese
4 tsbp Mornay sauce

For the Mornay sauce:
1 tsbp butter
2 tsbp flour
1 cup milk
1/2 cup shredded cheddar cheese
1/4 cup taleggio cheese
pinch of salt

1. Preheat oven to 350
2. In a medium saucepan, melt butter over medium high heat. Add flour, stirring constantly, until mixture is pale yellow and frothy, about 1 minute.
3. Slowly whisk in milk until the sauce thickens and comes to a boil, about 2 to 3 minutes.
4. Season to taste. Reduce the heat and simmer for a few minutes.
5. Stir in Cheddar and Taleggio and whisk until melted. (Keep warm until ready to use).
6. Spread Mornay sauce on one side of each slice of bread.
7. Pile on a thick layer of cheese.
8. Heat a medium pan and drizzle with olive oil. Add sandwiches and cook until lightly browned on both sides.
9. Place in oven until cheese bubbles.

I haven't tried it yet but it sounded really good. I wish I could find a bigger pic than this.

i love muenster & tomato grilled cheese.

my mom makes grilled cheese with four slices of american cheese, bacon, tomato and pickles. it's a heart attack on a plate, but it's awesome. oh, and she uses rye bread. so good.

i'm currently making the sauce for a tray of mushroom & spinach lasagna. yum.

I like my grilled cheese sammiches basic - bread, butter, & extra sharp cheddar cheese.

BUT...I have 'em with Campbell's tomato soup on the side.

Cheese is perishable. Ramen is not. Grilled cheese supply should *always* be exhausted before resorting to the Ramen supply.
