In chat yesterday I asked for a tasty recipe to prepare for myself and the princess, and Chuck D delivered in spades, so I thought I'd share. Here is the recipe with a few clarifying instructions, and way fewer capers (Chuck's recipe called for a whole small jar of capers, which is of course ludicrous).

Chuck D's Hellenic Orecchiette

3-6 cloves garlic, minced
2 large onions, diced
1 jalapeño, seeded and sliced
1 lb. sausage of choice
4 medium tomatoes, coarsely chopped
handful (6-8) fresh mushrooms, sliced
small pinch fresh rosemary
small pinch fresh sage
small pinch fresh oregano
a few greek olives (kalamata are good), pitted
1 1/2 to 2 tbsp. capers
1 lb.orechiette pasta
1/4-1/2 lb. feta, to taste

1. Sautee garlic and onion over medium-medium high heat until translucent.
2. Add jalapeño to onion and garlic. Sautee for another 3-4 minutes, or until jalepeno is soft.
3. Separately cook sausage over medium heat until done, slice into bite sized pieces.
4. Cook pasta.
5. Add tomatoes, mushrooms, and herbs to onions and garlic and cook for 10-15 minutes, until saucy.
6. Remove sauce from heat, add olives, feta, and capers and mix with sausage.
7. Serve over pasta with extra feta and parmesan and a bottle of red wine. Maybe some crusty bread, too.

Not anymore, though I still don't really eat red meat. I made this with sundried tomato and garlic chicken sausage.

A few weeks back I went all Florida Evans and prepared Dorkestra's Sweet Potato Pie, and I'll admit it was DYN-O-MITE. Colin's dish looks mighty savory too. The recipe's definitely going in the arsenal.

You could always use Pork sausage as well - It's the "other white meat" after all ;)~

(yeah, my non-red meat eating coworker doesn't buy that argument either)

BTW chuck, I managed to find the fresh herbs around the corner for a mere $1.49 apiece (a STEAL here), so I went for it.
