Recently I heard the teaming up of Bruce Hornsby and Ricky Skaggs and their bluegrass version of Rick James' "Superfreak".

Hearing that was almost as bizarre as watching Lionel Ritchie and Rob Zombie perform on Leno together.

Any other cover songs that you have heard that have just been really weird mixes and/or covers by people/bands you never thought would do them?

One of the greatest covers ever, in the history of the world is an example of this type of unlikely coupling:
Sly & The Family Stone - "Que Sera, Sera"
Sly does Doris Day?!?!?!

Others:
Hüsker Dü - "You're Gonna Make It After All" (Mary Tyler Moore theme)
Falstaff - "Brand-New Key" (Melanie)

And the ultimate odd couple...
David Bowie and Bing Crosby - "Little Drummer Boy"

kurt cobain covering leadbelly's "in the pines" sounds bizarre on paper, but it never sounded like an odd match, even the first time i heard it.

johnny cash covering soundgarden's "rusty cage" was a weird idea and an oddball of a song that sometimes doesn't sit right.
