Anybody got a tried and true Mojito recipe? Bring 'em on... in fact, suggest any good summertime drinks!

Ramos Gin Fizz

50ml Gin

25ml Fresh Lemon Juice

12.5ml Sugar syrup

12.5ml Rose Flower water

12.5ml Single Cream

A dash of Egg white

Soda Water

Shake all the ingredients (except the Soda Water) vigorously with ice and strain into a Collins glass filled with ice

Top with Soda Water. Garnish with a lemon slice

*This cocktail is also known as the New Orleans Fizz

I think Phil (epa) posted this in another thread, which I promptly copied to a text file and saved on my computer:
epa Wrote:
Mojito
3 fresh mint sprigs
2 tsp sugar
3 tbsp fresh lemon juice
1 1/2 oz light rum
club soda

In a tall thin glass, crush part of the mint with a fork to coat the inside. Add the sugar and lemon juice and stir thoroughly. Top with ice. Add rum and mix. Top off with *chilled* club soda (or seltzer). Add a lemon slice and the remaining mint, and serve.

Seriously, have one of these on a hot day and let me know what you think.

I have a more involved & larger batch recipe:

2 cups (packed) fresh mint leaves
1 1/3 cups sugar
1 1/3 cups freshly squeezed lime juice (from about 18 large limes)
4 cups light rum
Ice cubes
3 cups club soda

1. Combine mint, sugar, and lime juice in a large bowl, mash well with a potato masher.
2. Let mixture stand at least 15 minutes and up to 2 hours (I did 1 hour +).
3. Stir in rum.
4. Using ladel, divide mixture among 16 tall glasses.
5. Fill glasses to the top with ice and then top each with 3 tablespoons club soda.

After 3, I transferred the mixture to a large pitcher and added the club soda to the pitcher. They were a bit of a pain to make but mighty tasty and packed a nice punch.

Caipirinhas are a great summer drink too. I really don't have any tried and true recipe though. Getting good cachaca and mixing to taste is the key. They're also a pain though. Lots of mashing limes.

It's a lot of work, but the payoff is worth it.

I will concede that there is something to be said for cheap beer on a hot day... it goes down easy and tastes best when it's been sitting in a bucket of ice.

...a bucket of ice, or it's own dedicated beer fridge.

(may have told this story already, apologies)

Went to see my dad in FL once like 5 years ago, in July. He offered a beer (strange for him to have any, doesn't drink much). I asked how he came to have it, and he said "it's good to have a cold, cheap beer after mowing the lawn sometimes." I went back down at christmas, and lo and behold, more of the same beer in the fridge. I actually had that "is my dad gonna start drinking" thought, and I asked about it, and he looked really surprised, and said "I have beer in there?" It was the remainder of the same 12 pack of coors from July.

I meant to type lime instead of lemon. My bad.
