anyone who freezes bagels should be shot.

Kaufman's are good, but I still prefer New York Bagel & Bialy.

Thanks Harry. I'd just about given up on finding a good bagel anywhere near me.

Hey estone, is all that White Castle talk making you nostalgic for Little Tavern or is that before your time?

oh hell yeah..."buy 'em by the bag!" i think the CP closed down while i was there and became a cheesteak place. did you ever go to that one? the old man that worked behind the counter late night was completely BLIND, yet crazy enough i never saw anyone take advantage of him.

I'd guess that I probably did. Most of my Little Tavern memories though are of the Georgetown one on Wisconsin Ave.

Bruegger's is really good, but I never go there because it's not near my neighborhood. I typically find myself eating bagels from Panera (ok, I guess) or local Star Bagel. They're not a food item I regularly seek out.

Back in my Athens, GA days, I did go to Zim's Bagel Bakery quite often and to this day make a version of their "Georgia Lee melt" which was chicken salad on honey wheat bagel toasted with cheese. F'n delicious.

I wonder how hard it is to make bagels at home.

I thought about that, too. I found a recipe and it doesn't look very complicated. it seems that the boiling before baking is the thing of bagels. otherwise it's not more than a yeast dough bread with a hole in the middle. maybe I'm wrong.

I was just reading about someone doing them at home last week. I think the big problem was the time investment.

place near me called Brooklyn Water Bagel in Delray. the guy who owns it grew up making bagels in Brooklyn, and has this water filtration system in place that modifies the water so it's exactly like it is in Brooklyn...the outcome is authentic, Brooklyn style bagels. pretty crazy. he used to actually fly in water from Brooklyn, but it got too expensive, so he created this system.
