Saw someone mention Country Roads...Toots and the Mytals do the definitive version of that for my money.

I'm also a really big fan of a couple Grace Jones covers, namely her version of the Pretenders' Private LIfe and Johnny Cash's Ring of Fire, also covered fantastically by Wall of Voodoo.

There's tons really, hard to just pick a few. Maybe abit silly and all, but I also really have fun with some ska covers that Bad Manners have done, like their versions of First Cut is the deepest and Midnight Rider and such.
