i'm also a huge fan of the breakfast sammich at monty's blue plate diner.

East side old fashioned diner with les-type waitresses...really nice place, good food and very reasonable. HUGE pancakes.

it's right on Fair Oaks Ave. near Milwaukee st.
44 S. Fair Oaks.

Colin makes truly fantastic beer.

Yeah, i'm off the diet for just this weekend, Colin and I are hanging, and when we hang, food and brew has to be involved. Especially at this juncture in our lives.

Black bean and corn cakes
1/2 cup all purpose flour
1/2 cup corn meal
1 egg
1/2 - 3/4 cup of water, depending on how thick or thin you like your pancakes
2 tsp. oil
1 tbsp. salt
1/2 cup corn
1/2 cup black beans cooked

sift the flour and corn meal, add water, beaten egg, oil, and salt. Make as you would normal pancakes, brown well on both sides, top with thrown together tomato chicken curry, and sour cream, with a side of cheesy scrambled eggs. But how do you throw together a tomato chicken curry? I was asking myself the same thing as I was stumblin around colin's kitchen/pantry...

1 can kirkland chicken in water, drained and lightly browned with a bit of oil
1 can of tomato paste
1 can of organic potato leek soup
garam masala, red pepper, salt, black pepper, cumin, turmeric, and chili powder to taste
1/2 cup of water

add all together in skillet and cook it on down over low heat until it thickens. The longer it simmers, the better it tastes.

Side Note: It is wonderfully surreal to have people discussing good eateries in my town, more-so on My Side of town, on the board. Sublime. I hear fantastic things abt Lazy Janes... Busty/Bustette approved.
