I am dieting, not to lose weight but because my digestive system has been going crazy and i've been eating nothing but pure horseshit the past few months. Therefore, more salads shall be eaten. What shall I put on top?

I like oils. I also like Balsalmic vinegar. I try to find organic ones myself. I can't think of the ones that I buy, but Newman's aren't bad. If you are trying to lose weight though, I would advise the oil and vinegar route.

perhaps, but I'm not sure if its the "good" oil that you'd want.

I don't know man. I like oil-based dressings, like vinagerettes and caeser and the like. The main thing is to not put too much on - lots of people think they're eating healthy and dump like 2 oz. of dressing on their salad, effectively converting it into a cheeseburger. Go easy, and... toss well.

Completely agree. I think the proper amount according to various doctors/diets is like a teaspoon or something. It kind of defeats the whole purpose of the salad. Like the people who get diet coke, but order a Quarter Pounder and large fries. I'm not a mayo fan, so I agree with the oil based comment.

Yeah, too much dressing is gross anyways. Anyone have a lighter or at least amazingly delicious caesar dressing they would reccomend?

got this somewhere online:

CAESAR SALAD DRESSING

1 CUP MAYO
2 EGGS
1/4 GRATED PARMESAN CHEESE
2 TABLESPOONS OLIVE OIL
1 1/2 TABLESPOONS LEMON JUICE
1 TABLESPOON ANCHOVY PASTE
2 CLOVES GARLIC – PRESSED
2 PACKETS SPLENDA
½ TEASPOON COARSELY GROUND PEPPER
1/4 TEASPOON DRIED PARSLEY

COMBINE ALL INGREDIENTS IN FOOD PROCESSOR. COVER BOWL AND CHILL FOR SEVERAL HOURS.

another--this one is vegan.

Caesar Salad Dressing
Ingredients (use vegan versions):

* 1 teaspoon vegan mustard
* 10 teaspoon olive oil
* 1 teaspoon vegan Worcestershire sauce (be sure to find one without anchovies)
* 6 teaspoon lemon juice
* 6 teaspoon ground sunflower seeds
* 1 2/3 lb package medium tofu

Directions:

Blend all until creamy.

vegan mustard? what other kind is there?

those both seem to be for creamy caesars... here's a vinagarette from 'bon apetit' magazine:

1/4 cup fresh lemon juice
6 oil-packed anchovy fillets, drained, very finely chopped
1 tablespoon Dijon mustard
2 garlic cloves, pressed
1 1/2 teaspoons Worcestershire sauce
1 cup olive oil

Whisk all ingredients except oil in small bowl to blend. Gradually whisk in oil. Season to taste with salt and pepper. (Can be made 1 day ahead. Cover and chill. Rewhisk before using.)

Makes about 1 1/3 cups.

I questioned that as well...and have been searching online. Perhaps some contain seasonings with animal ingrediants? Or perhaps they are alluding to no honey mustard?

why are we giving recipes to this guy?

all of newman's own dressings are good -- try the Olive Oil & Vinegar, Caesar, Balsamic Vinaigrette, Italian Dressing, and Parmesan & Roasted Garlic.

hmmm...good question, although I did feel that perhaps the best way to monitor ingredients and intake is to make yr own. Or I thought he was poor like me.

No, I realize that now. Its just when I was trying to count calories, or watch what I ate, it made more sense to make my own and save money and not worry about "hidden ingredients" then stand in the aisle and scrutinize the label. Diff'rent strokes for diff'rent folks.
