Kingfish. Went out on the boat yesterday with a few pals, and the Atlantic delivered.

It's taking a bath in a garlic/citrus marinade right now :)

According to wikipedia, it is properly known as the King Mackerel.
It sounds like good eats, despite the fact I don't really like fish.
I haven't been fishing for over a year, I sure miss getting out on a boat with some beers and catching a couple fish.

it is indeed, but down here and throughout Florida we refer to it strictly as Kingfish.

and it's delicious.

Maybe next weekend :)

So yeah, the fish was a success! Fed 8 hungry people, and there's still some left that i tucked away in the freezer. As well as the fish i did some szechuan tiger shrimp for starters, loaded nachos, marinated NY strips, rice and beans, mojitos, beers, and just now finishing up a slice of Key Lime pie.

i'm stuffed, head spinning from staring at the night sky filled with fireworks, and i'm off to bed soon. hope you all had a sweet 4th!

someone post that "America, Fuck Yeah" clip!
