Cool, you got a roasting pan right? You can also use some of the drippings to make chicken noodle soup. Whatever you cook, cook like you're cooking for four, and then have a plan as to what you're gonna do for the leftovers.

just make sure you stuff that chicken like i told you.

I don't think it's a proper roasting pan, but it's a deep, thick 9X11 pan.

I made a Jamie Oliver recipe for roasted chicken a couple of years ago, but had problems when it came to cooking time. When I buy a whole chicken, will the package tell me how long it should be cooked? Is there a standard "for this size, cook ___ hours"?

As long as you've got a lid, or some foil to throw over it, you'll be fine. The thing with roasting it is that you're cooking it at low heat, hot enough to kill anything, but low enough that it isn't gonna dry out, so just throw it in there and if it doesn't look done, let it sit an extra half hour or hour and you won't damage anything and ensure that it's cooked. Then take the lid off to brown it. 1.5 hours to 2.5 hours will cook it, don't you worry. When you stick the breast or the the thigh with a fork, if the juice runs clear, you're done.

I buy romano lettuce, nice and fresh from this italian guy.

Otherwise I eat regular food. I have abstained from fast food for looks like 3 years now.

Or make chicken salad with halved red seedless grapes and almonds and a tiny bit of mayo, or make some jambalaya with the chicken and some hot sausage and shrimp. So you can go a bunch of ways with that chicken that you roasted (which is so friggin easy to do. rub it with olive oil, bake at @ 275 for an hour, take the roasting lid off, pour off some of the drippings for gravy and turn it up to 325 for 15-20 to brown. If you're living by yourself, you can eat and cook off of that for a good 3-5 days and have a lot of variety with just a bit more effort. By the time you go out, order some food and sit down and eat it, you can have a cheap good as hell meal at home.
