I'm gonna add Tom Wilson. He doesn't get mentioned much in these kinds of threads but I always loved the way albums he produced sounded. On the flip side of that I'll also add Bob Johnston. I like what both those dudes did with Dylan in comparison to counterparts Phil Spector & George Martin.

Albini is a producer insofar as he makes decisions on how things are mic'ed and where things are in a mix. That does vary from band to band, however, so in some cases he is just an engineer.
