I travel from New Orleans to Lafayette fairly regularly, and there's a place off Hwy. 90 that is definitely a must-visit. It's called Billeaud's, located in Broussard, LA. It's a Shell gas station with a butcher-shop/convenience store attached. Their boudin has attained the coveted A+ rating from www.boudinlink.com. Their cracklin is tip-top, if you're in to the whole seasoned, deep-fried pig skin... which you should be, because it's incredible.

If ever there were a place to fill up your tank with gas and your mouth with pig offal, this is definitely THE place.


ha ha. I sent the boudin link to Gar a couple of months ago. There are so many great boudin places around Lafayette. I also liked Comeaux's on K.Saloon but I'm not sure they're open anymore.

fuck yeah - and whoever said "hot sauce + mac and chee" is right on. Deeeelicious. It's good too with really thin slices of tomato and crumbled kettle chips on top, when you're making the real shit in the oven. Then when you take it out, you get up in it with some Crystal and DAYUM. Ohhh I should try that with bacon in it too.

That's the thing with Crystal, TX Pete, Rooster, and some of the others - not much heat, just a tangy flavor with a little bit of kick. I have no love for the macho Flaming Butthole or whatever sauces.

Bacon works well, but I recently started adding ground sausage...browned.

My oldest has been putting hot sauce on his mac & Cheese since he was about 6. Loves it. Gotta teach 'em right!
