Cheddar on honey wheat last night...although I have no issue with American cheese slices for the traditional grilled cheese. And, I do side with those thinking once you go beyond bread and cheese you've entered actual sandwich territory instead of a grilled cheese.

Semantics aside, it's hard to look at a grilled cheese and think it wouldn't be 1000x better with that bacon in the fridge on it. And then once you've changed it a little, it's a slippery slope to tomato territory.

- Pasteurized process cheese food is a variation of process cheese that may have dry milk, whey solids, or anhydrous milkfat added, which reduces the amount of cheese in the finished product. It must contain at least 51% of the cheese ingredient by weight, have a moisture content less than 44%, and have at least 23% milkfat.

- Pasteurized process cheese spread is a variation on cheese food that may contain a sweetener and a stabilizing agent, such as the polysaccharide xanthan gum or the Irish moss colloid carrageenan, to prevent separation of the ingredients. The cheese must be spreadable at 70 F, contain 44 to 60% moisture, and have at least 20% milkfat.

- Pasteurized process cheese product is process cheese that doesn't meet the moisture and/or milkfat standards.

- Imitation cheese is made from vegetable oil; it is less expensive, but also has less flavor and doesn't melt well.

I also learned that american cheese slices that are individually wrapped are poured onto the plastic in liquid form and left there to solidify before being sealed.


I had someone cancel a 30 minute meeting, fwiw.

I was kidding, because it sucks so bad, and because we eat so much of it.


The title, it turns out, dates from the 50's when it was made of a blend of colby and cheddar cheeses, both popular in this country, in order to make a milder product that would melt without separating. It took off here, and the brand name stuck, eventually finding its way into cheese regulation definitions (see above). We went from eating an average of 5lbs each /year of cheese around 1905 to now eating almost 30lbs each /year.
