I'll be honest, my wife had to sell me on the unrefrigerated butter thing--I was sure it was a short road to ass botulism, but no, its just a convenient way to have delicious soft butter at your fingertips.

I used to have this problem all the time. Just heat the pan first and drop in the portion of butter to use on the one side. Slather the cold piece of butter around the hot pan 'til it melts then throw the sandwich in to soak it up and get fried. Repeat for other side.
