I love pork steaks, they are cheap and delicious. I also like pork chops, but there has to be a bone involved; those butterfly fillet things are silk-hat-on-a-pig territory.

This endeavor inspired us to create a burger tonight. We mixed beef with chorizo, bread crumbs, an egg, salt and pepper to form patties. Grilled and melted cheddar on top. We were going to do queso blanco but we forgot to buy any. On toasted wheat buns with refried beans, guacamole, pico, and a thin spread of roasted tomatillo and poblano mayonnaise.

Yeah, they are great for throwing a bar-b-q when you want something really tasty but don't wanna break the bank. Wasn't sure if Atlanta sold these or not, lots of places don't. Both my brothers moved to Chicago and they have to find a butcher and explain what they are in order to get them. most parts of the country it seems do not sell these typically, something I have never understood.

Partially in response to my June break-in but also because I want to live close to civilization and commerce, I'm moving to the south end of Austin in a couple weeks. I was already a 20 or so minute drive from Phil and Deena's and the move will push it closer to a firm half hour or more, which makes impulsive trips for grub that much rarer.
