definitely looks good n tasty. i'd eat a big apfeltart after one of these.

i'll probably be baking a few of the buns from scratch on some upcoming burgers, a thing for which i cannot wait

thanks guys. to do the mayonnaise was interesting and easier than I expected. the good thing was, I could use olive oil for it instead of the normal plain vegetable oil which gave some nice extra spin in taste.

oh and the wine would have been labled as "halbtrocken", it was a kabinett so the grapes had some more sun. after these 3 years in the bottle a riesling turns out to have more staying power and some notes like honey appear, compared to the earlier picked grapes. I love wine from that region around the mosel.

I made three burgers, one for a friend who contributed the wine and one for the berlinerin. although I thought about locking the door and keep everything for myself...

i'll give you the edge for the homemade buns, but that pretzel bun looks damn tasty.

My Critiques:

Toots/FemToots (sorry I'm not gonna call you Shera):

Burger looks good, bun looks good. I agree with Robotboy regarding the Ham, but perhaps more than the quality of the Ham, I'm bothered by it appearing to be cut very thick and that it looks from the picture that you have almost as much Ham on the bun as you do burger. All that shredded lettuce is too much too. I'd scrap all that off if you served it to me. You want the burger to be the star and it is too hidden underneath lots of other stuff.

Berliner: nice presentation. The tomatoes and salad topping look like real quality. Is that the cheese underneath the tomatoes? If so, it looks like it could use a little more heat to melt it all the way through. I'm not sure what I think about your sauce. I'd probably prefer it without it but it doesn't look like you put too much of it on. I'd give this round to you if you didn't eat a burger with a white wine.

We'll have to call it a tie.

good critique, and much appreciated. however, this philosophy will probably be our downfall on the billy g grading scale, as pretty much all of these C&B Society burgers are dressed to the 9s.

i can understand the burger star power angle, but i'm interested in the gustatory ensemble casting of these particular recipes

You're right that you're fighting up hill with me on these C&B burgers. However, look at your burger compared to the C&B Society Rhinelander or Berliner's:

Toots/FemToots:

C&B:

The burger looks puny compared to the bun and toppings on yours where it doesn't with the C&B burger. There's much more lettuce (and it doesn't even look like good quality lettuce), and a little more ham and that bun is pretty huge too. Your burger to other factor seems off by a factor of 2-3X.

While you made some big improvements in this round in meat quality and bun, I think you may have taken an overall step backward.


Also, look at Berliner's:



He has maybe only one less item on there than you but a much better meat to other ratio and the greens look much fresher. Too bad, he ruined it by drinking a white wine with it. Do Germans even drink Red Wine? I'd give him a pass based on that but he could obviously have had a beer instead.
